Kaldero

These three large kaldero (vat/cauldron) contained boiled beef shanks (bulalo in South Luzon). In West Visayas, boiled beef shanks is called kansi (with batuan and annatto), while it is known as pochero in Cebu. Whatever version it is of boiled beef in the Philippines, the common cookware is the kaldero.

Bibingkang itlog is the only bibingka that is soaked or dipped in vinegar when eaten. It is made purely from penoy. Think of it as an unfertilized duck egg omelette.

Pulasan

Pulasan is a tropical fruit similar to rambutan but has thick spines instead of hair-like ones and is easier to peel. Its seed is edible with nutty taste. I like to eat the seed more than the fruit.

If I heard it right, then talong talong is what the vendor in the public market call this vegetable which according to her is a small eggplant, bitter in taste and can be used as substitute for ampalaya.

Motorela

This is a tricycle that looks like a mini jeepney or a multicab. I’ve seen this type of trike in Camiguin, Misamis Oriental and Bukidnon provinces.
In Malaybalay City it functions like a shared taxi while in Cagayan de Oro City it works like a jeepney system.
