Pinamalhan na salmonete

Pinamalhan is a Hiligaynon term for stewing fish in vinegar and salt (and/or soy sauce) until all liquid evaporates, hence the dish becomes mala (dry), and that’s why it’s called pinamalhan. We normally include crushed garlic and/or sliced onions to the vinegar and fish for the stewing process. Salmonete fish is perfect for pinamalhan. Back in my growing up days in Bacolod, I recall my mother will always prepare pinamalhan na salmonete every time she can get hold of fresh salmonete from the wet market. Naturally, I get to acquire the liking for this simple breakfast viand that is totally perfect with steamed rice.

Nasi Tumpang

Nasi tumpang is a Kelantanese breakfast staple similar to nasi lemak but the rice with viand inside the banana leaf packaging is more compact in conical form. Its packaging makes it a portable meal (just like the banana leaf wrapped nasi lemak). The texture of the rice inside is like the ketupat – so dense. I suppose nasi tumpang is always eaten cold like the onigiri in Japan but I find its curry-sambal flavor layering quite appealing.

Rice Breakfast over Continental Anytime

It was an early morning weekday rush hour where street food vendors abound. And where locals hurriedly buy either packed breakfast or packed lunch to bring to work.

From the lady with huge pot in front her; I got packed rice meal that was a cross in taste between chicken biryani and Ilonggo’s valenciana. I wished I had more breakfast mornings in Bangkok – it was that good.

Back at the hostel where travelers of different nationalities were having breakfast too in the “mess hall”, I was very delighted of my rice meal packed in brown paper than the Continental breakfast set some just ordered in there for 65 baht, which looked good by the way. But Continental breakfast is so dull and the last thing I would have. However, the-last-thing-I-would-have-for-breakfast is eternally present in almost every breakfast menus.

DIY: Danggit Lamayo

Occasionally there’s fresh danggit in the talipapa near the village where I live so in one of those times I decided to get some (80 pesos/kilo) and asked the fish lady to open it up.

I marinated the danggit in vinegar, garlic and salt and let the fish absorb the marinade overnight inside the refrigerator before freezing it.
Danggit lamayo is usually eaten as breakfast in Palawan. It was in Coron where I had this for the first time as my daily breakfast. After that first time, I’ve observed that in Puerto Princesa and El Nido, fried danggit lamayo is ever present in the breakfast menu of hotels, guesthouses and resorts.
One thing normal to danggit lamayo (no matter if it’s boneless or not) is the price. It’s expensive even if the concept is the same as those packed marinated bangus. Must be because rabbit fish isn’t farmed.

Nasi Lemak

Nasi Lemak is usually eaten for breakfast. Aside from an eating house, one can buy this from a street vendor early in the morning.

This is an easy to carry breakfast pack in a newspaper and banana leaf packaging. Cheap and portable and I have a thing for sambal.
